Homewood Park’s Festive Dining and Recipe

It’s the most wonderful time of the year – especially so at our resplendent country manor hotel. To give you a taste of what we have in store for guests who spend their Christmas in Bath, our talented Chef has provided us with an exclusive Homewood recipe – classic roast turkey with chipolatas, red cabbage, honey glazed parsnips and glazed carrots.

Ingredients (for 4 People)

800g Turkey breast

Stuffing

500g Sausage Meat

200g diced Turkey leg

100g Chestnut Chopped

1 Clove Garlic

1 Shallot

6 leave Sage

4 Chipolatas

4 slice of streaky bacon

1 Parsnip

2 Large Potatoes

1 Carrot

Red Cabbage

¼ Red cabbages

50ml red wine vinegar

60g Brown Sugar

100ml Orange juice

Garlic

Thyme

Red wine Jus

Turkey

Seal the Turkey skin side down then put in a roasting tray with mirepoix and roast for 40-50 mins taking the temp to 75 c

Dice the turkey leg meat and add to the sausage meat, garlic, chestnuts, sage and orange zest

Mix until combined then roll in tin foil and cook on 180c for 30-40 mins

Peel and baton the parsnip shallow fry in oil and butter till golden brown then add honey and roast for 20 mins

Shred the red cabbage add red wine orange juice garlic and thyme bring to the boil and simmer for 2-3hrs then add dark brown sugar add cook until sticky

Take the chipolatas wrap in streaky bacon colour and cook in the oven

Peel potatoes cut into roasties steam for 13 minutes deep fry on 140c for 14mins then put to the side till ready to use

Peel carrots cut into shape required put into vak pack bags with butter and cook in the steamer
