Here's just a short biography telling you where I've been and what I've done...

I trained in Exeter College and afterwards worked at St Olaves Hotel for two and a half years. During this time, I also spent six months working at its sister hotel, Holme Chase with a three rosette restaurant, learning pastry. Wanting to progress my career further, I then moved to Bath to work at our sister hotel Hunstrete House and after 18 months, I moved up the ranks to become Head Chef. During my time at Hunstrete House, I gained 86% from the AA and 92% from the RAC. I then moved to Homewood Park and have been here for one and a half years and I am currently aiming to achieve our third rosette and a Michelin star.

My Food Style - English at Heart with a European Twist

My Philosophy - People eat with their eyes first and therefore presentation plays the first role and taste follows suit. It is therefore important to source only the best ingredients and use local produce when it is the best on offer.

My Signature Dishes - Sautéed South Coast Scallops with Irish Black Pudding, Parmesan Tuille and Chorizo Oil and Roast Quantock Beef with Oxtail Suet Pudding and Ox Cheek Terrine served with Butter Bean Puree and Ox Jus.
